Lately...

Hi I'm Lindsay how are you? Nice to finally talk again it's been awhile. Can we first off just talk about how it is almost November... What the?? It's almost Christmas?? How is this possible? I feel like I was just shopping for swim suits and doing cannonballs in the pool like yesterday. This is crazy talk. Anyways though I had hopes of posting a bunch of pictures and filling you in on a little bit of whats been going on down here in crazy town so here we go.
1. "The Dress" has officially been ordered. I am relieved, excited and am having anxiety currently all in the same moment just thinking about it. Yes I am having anxiety over a silly little dress but it's the truth so lets high five and pass me a piece of chocolate!! Ahhh!!

2. I am currently constantly craving pizza which is good for my taste buds and but bad because of the purchased item above. I am counter acting it with lots and lots of celery though so I'm sure that evens its out?? Yes? No? Maybe so?

3. I am actually really into football this year... I Lindsay Dixon have a fantasy team! Who Am I?? 
Me and Jeremy have matching game day socks! This is a true story... although the Cowboys didn't win this week and it was our first time wearing them so Jeremy believes they might be cursed and they may be getting burned?? I will keep you posted though on the current status of "the socks"... stay tuned!

4. I think I have currently made the Gluten Free Apple Pie Cobbler that I posted last week like 10 times already...  Shhh we won't talk about that though! 

5. We went to the Texas State Fair.

6. I am working on the wedding song soundtracks and I am constantly crying like a big baby. How on earth am I even suppose to make it through that day without looking like a crazy mix between a puffer fish/platypus. (yes my lips swell when I cry... like a lot) I better start praying for strength and grace everyday from now till then. I am going to need it, but I seriously cannot wait for this day no matter what I look like. I will finally be married my sweet Jeremy. He will be my husband! Capital.. O M G!! I'm dying just thinking about it!

7. The leaves are finally changing I am so excited! This is one of my most favorite times of the season. Can we skip the freezing wet rainy winter though!

8. We are looking at rental houses for the year to come! Ahhhh! But even more exciting we are looking at floor plan ideas for the "Family Compound". Haha! Yes we are looking at maybe purchasing land with my parents and everybody building on it!! We are so beyond excited to have family so close! Especially since I will most likely be working from home and my mom as well, this could be trouble! We are keeping our fingers crossed though!

9. I have been trying to come up with new ideas for the blog! New ideas are to come hopefully! My only weakness is being brave enough and taking chances!

10. Honeymoon ideas anybody?? Where do we even start there is so many beautiful places!

11. We saw the movie Gravity in 3D, it was super good and I highly recommend it. However, I do not ever want to go to space now.... No thank you!

12. I finally got my hair done. My roots were to my eyebrows... and no this is not a personal record. I am cheap and I like to drag it out as long as I can.. this involves lots of hats and lots of headbands!

13. I may or may not currently be addicted to wearing a huge white hotel robe that almost drags the ground around the house... at all times! It's kind of fun to twirl in it and pretend your at the spa.

14. Engagement Photos are in the works as well as ideas for me and J's 25th Birthday! Why does turning 25 seem so significant?? It's like your half way through your twenties and then almost to your thirties. I can't wait though keep the years coming. I'm sure the best is yet to come.

I think thats just about it! I liked this we should do it more often. Oh and one last thing search the show "The Blacklist" on hulu. I was up all last night getting caught up! It's a pretty good new little crime show. Hope all is well sweet friends.

Chocolate Macarons (gluten free)

Ok so before we start, I totally did not create this recipe (you can view the original recipe here). I actually got it from watching the show "The Chew" one morning and have been dying to try it out! With that said, I just want yall to know I am totally not taking claim of creating this recipe but yet I am so excited about it and I could not wait to share it with you all! I had never before today tried a macaron but have been dying too because of all the recent rave about them as well as numerous friends telling me how yummy they are. This recipe seemed easy enough but I totally went in thinking it was going to be a total fail as I had heard they are pretty tricky to make. I followed along the recipe and believe it or not they turned out really great! They are beyond adorable and are so super yummy! They kind of remind me of a gooey brownie. I hope you all will give it a try and let me know whatcha think!

Ingredients:
3/4 cup Almond Flour
2 cups Powdered Sugar
1/4 cup unsweetened Cocoa Powder
pinch of Salt
3 Egg Whites
1/4 cup Granulated Sugar

Tools:
Icing Piping Bag
Medium / Large straight Tip (for piping bag)
(if you do not have these two things its ok you can use a spoon 
or cut a hole in the bottom corner of a ziplock baggy)
Parchment Paper
Baking Pan
Mixer with Whisk attachment
Spatula
Bowl

1. First you want to make sure your Almond Flour is very finely milled, if it seems to still be a little chunky you are going to want to throw it into the food processor and pulse it a few times till you get a good fine flour. Do not leave it on for to long though or you could get almond butter! 

2. Next in a separate bowl, combine your Almond Flour, Powdered Sugar, Cocoa and Salt. Mix them all together and set aside!

3. Now get your egg whites and your sugar and place them in your mixing bowl and whisk them on high until they form smooth stiff peaks. Be careful though to not over mix them. They should be glossy and look like yummy melted marshmallows.

4. Now slowly fold your dry ingredients in with your wet (the wet ingredients being your whipped egg whites or otherwise known as meringue).

5. Once everything is completely combined it should form a sticky rich chocolatey batter.

6. Next get your baking pan ready by placing a sheet of parchment paper on top.

6. Now its time to place your batter into your piping bag or if you do not have a piping bag you can cut the corner off of a ziplock baggy. You want the hole to be about a half an inch in diameter.

7. Squeeze your thick batter onto the parchment paper spacing them about 1 1/2" apart and about 
1 1/2" inches in diameter. Once you're done squeezing the batter onto the baking pan you now want to let them sit there for about 30 - 40 min.

8. Once they have sat there and have formed a thick non wet coating on top place them in the oven for 12 min. at 350*

9. When they come out you will be so excited to see them in all their tiny cuteness along with their raised crackly edges. Pull the parchment off of the hot baking pan and set them aside for 15-20 minutes or until they are completely cooled. 

10. Once they are cooled completely, you can scrape them off of the parchment paper with a spatula and slap some yummy icing in the middle and serve.

We tried all sorts of fillings, some of which included homemade buttercream, peanut butter, roasted marshmallows and my favorite of course the chocolate ganache! 

* To make the Chocolate Ganache filling just combine chocolate chips and heavy cream in a microwave bowl and slowly heat them together until they are melted and create a think chocolatey sauce. *

Gluten Free Apple Pie Cobbler

What you will need:
1 cup Almond Flour
3 Green Granny Smith Apples
1 Tbsp Brown Sugar
1 Tbsp Cinnamon
1/2 tsp. Stevia (divided)
1/4 tsp Salt
2 Sticks of Unsalted Butter
(you can swap the butter for coconut oil to make it dairy free as well as paleo friendly) photo gfapplepie15.gif
First Mix your 1 cup of Almond Flour in your Pie Pan along your 1/4 tsp Stevia and 3 Tbsp of melted Butter.

It should come together to make a crumbly soft dough, sort of like a sugar cookie dough.

Press your dough down into the bottom of your pie pan to form a thin layer.

Now set that aside and get out your beautiful bright green apples. Peel them until all those beautifully green skins are gone.

I like to cut them into slices and then into small cubed like pieces.

Next it's time to mix up your yummy sauce. You will need 1 Tbsp Cinnamon, 1 Tbsp Brown Sugar, 1/4 tsp Stevia, 1/4 tsp Salt and then last but not least 1 Stick + 1 Tbsp of melted Butter. Mix this up in a small bowl and then pour your mixture over your sliced apples. Toss the apples around until everything is coated in the cinnamon sugar sauce.

Pour your cinnamon apples over your almond dough crust. Spread them around so they form and even layer on top of the dough.

Cover it with foil and place it in the oven to bake at 350* for 40 min.

When your Apple Pie Cobbler is done it should be bubbling and will smell like heaven. The apples with be soft and sweet and the almond crust will be creamy and yummy. This has definitely become one of my new favorite desserts. Not only is it super easy but it is so delicious and great for fall. 20 Things...

I posted this on instagram a few weeks ago and thought it would be fun to document it on here as well.

1. I met Jeremy when I was 12. He has been my best friend and I have loved him with all my heart ever since.

2. I cannot wait for the day when I be come a mommy, rather it be I am able to birth my own, adopt or both. My heart could just about burst with happiness and love just thinking about it.

3. I eat peanut butter daily. Usually with a spoon and straight from the jar.

4. Homemade Rice Krispies are one of my favorite desserts! P.S. eat them with a fork straight from the pan when they are still hot... if you have never done this you must try it and you can thank me later!!

5. I believe in kindness and that everything should come from your heart always and if you do these two things everything will always be ok.

6. I am a homebody and live in my pajamas about 95% of the time... Working from home does not help this percentage. I collect pajamas like a normal girl probably collects shoes!

7. Fall is by far my favorite season and Christmas is my favorite holiday. I love the cheerful music, the twinkly lights and the wonderful time spent with family and friends.

8. I once almost got arrested because I offered to make a cop some Thanksgiving pies in trade of not giving Jeremy a speeding ticket. (Who would have thought?? I just sincerely thought his wife would be so excited when he came home with yummy pies... and I once again was in my pajamas. Can you imagine that mug shot! Yikes)

9. I'm a sucker for anything that has Lucille Ball, Julia Roberts, Diane Keaton, Meryl Streep and Aubrey Hepburn in it!

10. I have a special place in my heart for people of all kind. I will forever have the feeling in my heart of wanting to make someone feel special and loved for who they are. I will always choose to see the best in them and give them the benefit of the doubt.

11. I am on the national bone marrow donation registry and I would strongly encourage you to be as well.

12. When I was little I had two imaginary friends named Carly and C-C... Yes we had to save two seats at the dinner table for them!

13. I have three white labs named Jagger, Lucy and Trooper. They are my angels and I give them kisses every night before bedtime.

14. Jagger is named after Mick Jagger from the Rolling Stones and Lucy is named after Lucille Ball from I love Lucy! Trooper otherwise known as Troopy was rescued so he already had his name but he is just as special and loves to sit in your lap... Who am I kidding all of my dogs do but if you have met Trooper you know what I am talking about! This dog loves him some body to body human contact!

15. I have a birthmark above my right ankle!

16. I am very close to my family! We are one of those families that shares everything! No secrets allowed! Jeremy used to call us a bunch of hippies... But over the past 7-8 years he's gotten used to it and is so code with my family as well! This is such a blessing to me and I love them with all my heart! 

17. I am allergic to gluten and didn't find this out until last summer! Hallelujah! I am so thankful I did though because all of my stomach digestive problems are finally healed!

18. I love to craft and create anything! I was never really into sports or music growing up but Art has always been my happy place! There's nothing quite like the feeling I get when creating a new painting.

19. I just recently started liking scary movies.

20. And last but not least there is Africa... A little piece of my heart has always been there and I can't wait for the day that I finally get to go! I know the Lord's timing on this will be correct and I must be patient.

Gluten Free Cinnamon Rolls (with the option of being paleo)

Ok so a lot of people have been asking for this recipe after I've posted pictures of it on Instagram two different times. Being someone who can't eat gluten and is also very conscious of there carb/sugar intake it makes it very tricky sometimes to find healthier dessert options or just baked goods in general. I came up with this little recipe a few months ago after trying a basic almond cake recipe which I have now created so many other recipes from. In saying all of that I would like to just tell you that this is not a traditional cinnamon roll recipe, but rather it is meant for us gluten free people or someone who maybe doesn't have to worry about gluten but doesn't want to feel so guilty after eating a whole plate of these bad boys. I think they are a wonderful option and even my mother who is a total dessert snob and isn't gluten free scarfed one down in a matter of seconds. She thought they were fabulous and especially when I told her how much healthier they were when compared to a traditional cinnamon roll she was really loving them! So after much anticipation...  Drum roll please... The gluten free cinnamon roll recipe is finally here and is posted below along with some photos to hopefully help show you how I created these little lovelies.

For the Dough:
*dry ingredients*
3 cups Almond Flour
1/4 cup Baking Powder
1 tsp. Baking Soda
*wet ingredients*
2 Eggs
1/4 cup Melted Butter 
(you can swap with coconut oil for paleo eaters as well as non dairy eaters)
3 tbsp. Honey
4 tsp. Stevia 
1/2 tsp. Salt
*Combine your dry ingredients in a bowl and your wet ingredients in a separate bowl. Once each mixture is well combined add together in one bowl to form your dough.*

For the Filling:
4 tbsp. Melted Butter
2 tbsp Cinnamon
2 tsp. Stevia
2 tsp. Brown Sugar
1/4 tsp Salt
*Combine all your ingredients in a small bowl and set aside.*

For the Icing:
*low sugar icing option*
*This icing is more of a low sugar option so if you are looking for a more traditional icing recipe I posted one of those below, But since I'm trying to make these a little more healthy and not so loaded with sugar this is what I came up with. Also please note that its more of a glaze type consistency or in my case a dunk while you eat them type of thing!!!*
1 tbsp Butter
1/4 tsp Vanilla
1/2 tsp Stevia
A dash of Cinnamon
1 tbsp Almond Milk
*Combine all your ingredients in a small bowl and set aside for when the rolls are done.
(this icing recipe is meant for one serving only so double triple or quadruple depending on how many people you are planning to serve at the time! This can also be made ahead of time and then place in the fridge for when it is needed.*

*traditional cream cheese icing*
4 ounces Cream Cheese, softened
1/4 cup Butter, softened
1 1/2 cups Powdered Sugar
1 1/2 tsp. Milk
1/2 tsp. Vanilla

1. First lay down a long strip of plastic wrap and then place your ball of dough on top of it. Slightly spread it out with your fingers to form a somewhat flattened rectangular shape (as seen in photo 1). Next place another piece of plastic wrap across the top of your spread out dough. Take your rolling pin and roll out your dough till it is a little less than a half an inch in thickness. Once its flattened and has still kept its rectangular shape remove your plastic wrap that is on the top and proceed to the next step.

2. Now that your dough is flattened take your cinnamon sugar filling mixture and spread it all across the dough with the back of a spoon. It should look something like the second picture.

3. Lift up one of the sides of your plastic wrap (one of the longer in length sides).
4. Use the plastic wrap as a guide and slowly start rolling up your flattened creation.
5. Keep rolling until your cinnamon roll log is completely rolled.

6. Make sure the edge is sealed.
7. Now wrap your cinnamon roll long up tightly in the plastic wrap and place it in the fridge 
for 30-60 minutes.

8. Once your little log is cool and a little more firm, unwrap it and slice it into 1" inch thick mini cinnamon rolls.
9. Place your rolls cinnamon swirl up onto a baking pan of your choice. A pie pan works really wonderfully for this. It's also your choice of how many you would like to make at the time. I usually just eat two and wrap the rest up and stick it in the freezer but if your feeding your whole family go ahead and cook them all. Just know you can wrap the log back up and slice them as you need them. Bake at 375* for 15-20 minutes depending on your oven and how many you cook. Check them at 15 minutes and if they are golden brown on top they should be good to go. Don't get me wrong the texture of these are not like your typical stretchy chewy cinnamon rolls.They are made from almond flour so they are going to be a little more soft and have some what the same texture to corn bread or an oatmeal raisin cookie, but for us gluten free eaters as well as low carb lovers these are a great little treat to add to your recipe book! Day to Night (funky Texas weather edition)

So with a change of season comes new things. New things in which I am quite fond of. They most definitely include a few of the following... boots (drooling) scarves (drooling even more) warm cozy sweaters (I have officially now gone into a complete state of unconsciousness). I'm not that fond of the super friged cold months of winter but Fall by far has my heart. I love everything about it, so with this new change of season I thought it would be fun to to do a day to night look. As for here in Texas it's not quite cold enough in the day time yet to layer up but when the night falls we get a nice cool little breeze. So I put together a little fall inspired outfit that is super comfy and great for the warm days as well as the cool nights. You will notice I am wearing the same outfit in the pictures below except for the shoes. So if your like us Texans and your weather can't quite make up it's mind just yet you can wear a simple pair of sandals in the day time when your running errands but when the sun sets and your planning on spending the night with your honey at a movie date for two, you can do a quick little shoe change throw on those boots of yours and that a way your little toesies won't get cold!
