We have set a date!

Ok so if your wondering where I have been for the past week I have been in total wedding mode. After J proposed last December it got a little crazy with the Holidays and then his knee surgery was at the beginning of January so I am so happy to finally say that we are healthy and happy and are ready to plan this wedding! I mean I have been ready to marry this man for over a decade now people!! It's about time! The date has been set and the pinterest boards have been filled!! I'll share as much as I can along the way but I don't want to give to much away for the guest who will be attending! I'm beyond excited but more so than ever I cannot wait to create a home and a family with this sweet man. Sending big love yalls way and I hope you all have a wonderful weekend.

We had a few rainy days which I loved. We got a little taste of some cooler weather and it's got me itching bad for fall. I spent most of the rainy days soaking up every bit of it and creating in the studio until the wee hours of the night. Oh how I dream of days like this.

We failed... miserably! They didn't even respond to the word treat... what dog doesn't respond to the word treat? They are crazy I tell ya.

Later on that night we decided to have a little movie date for two which then of course was followed by some late night grilled cheese making. Mmmm I could use one those right about now.

I did in fact have a good reason though. I was still recovering from the battle wounds caused by the very sharp scissors that I swear had it out for me that day and chose to snip me three times while I was cutting Jeremy's hair. Three times!!! I think it's time we suck it up and pay the 20 dollars to let a professional do their thing. I may or may not have cried but thats old news. Oh and for lunch we ate nachos in bed & it was glorioussss! I highly recommend you try it sometime and yes we kept it classy by eating them straight from the pan. I mean if your gonna do it.. do it right people. photo Collageviboil.jpg For dinner we took a little late night drive to In & Out for some yummy burgers and then drove on down to a pretty spot by the lake that I much rather admire. It is in fact the spot that me and Jeremy have been going to ever since we were younger and it is also the spot where Jeremy proposed to me. So needless to say it's a pretty special little spot. We ate our burgers and watched the sun go down then headed on home to snuggle up and watch a netflix movie. photo Collagevtdsbet.jpg

We loaded up the car and headed out for some much needed friend time. We laughed and grilled out, had some girl talk of course, braided each others hair, the boys played volleyball and the rest was history. Sunday was a good day.

For some reason this weekend seemed extra special. I feel like me and J were somehow able to slow it down a little and soak in every last moment. Thanks for all the good memories week, you were a good one. Oh and did I mention we rocked out in the car to old mix tapes and it may or may not have involved a move called the cockroach which requires you laying all the way down in your seat and flailing your arms and legs around up in the air like a crazy person or as the name speaks for itself the goal is to look like a cockroach (stuck on its back of course.) It was the best!
I hope your weekend went wonderfully as well and hey give the nachos in bed a try and if not that then definitely try the cockroach move in the car its always a sure sign to a good time!

Ok so I have to share a funny little story with you that will tell you just how ready I am for fall.
The other day me and J were watching a movie and I dozed off in the middle of it. Once he realized I had unfortunately missed half of the movie he woke me up in which I replied... "Sam Edelman."
He was confused and shook me a little more to which I replied again with "Sam Edelman." Realizing no he didn't in fact misunderstand me he started to laugh and asked me who's Sam? I at this point started to come out of my deep little slumber and realized what I had just said. I started laughing and told him Sam Edelman boots! Like duhh he would of course know what I was talking about. He at this point is still confused and I am still laughing. I then had to explain to him who the infamous "Sam Edelman" was and the lovely boots of his in which I have been lusting over for fall. 
These were the boots I guess I was "literally" dreaming about!
Aren't they adorable! I hope everyone's weekend went just lovely!

Our little beach vacation...

A couple of weeks ago we packed up the car and headed down to Surf-side for a little beach vacation. Jeremy's family was already waiting there with open arms. This beach has a special place in our hearts for it is the beach that we spread Jeremy's Pappy's ashes last year around this same time. It was so great to be able to go back and feel his happy presence, for it is always with us but it is ever so strong at that beautiful beach. It was such a lovely long weekend that we got to spend staying up late laughing with family, playing games, probably getting a little too much sun and eating way too much yummy food. We were sad to see its sandy little horizon get smaller and smaller in our rear view mirror as we drove away smelling like sunscreen and the salty sea, but until next year beach just know you will be missed.

So this is my version of the classic white t-shirt and jeans. I know I know its not technically a t-shirt but its pretty darn close and is oh so comfy! When I first found these tanks at Anthropologie I just about died but thrifty little me I only left with one sad grey one. After having it for a couple of weeks I realized how much I truly loved it and ended up buying them in almost every color online. They are so wonderful because they can be worn with just about anything even leggings are ok because of the extra added length in the back, It covers your bum perfectly. No one likes a bare bum in leggings and this girl right here loves her some leggings. Don't we all I mean come on they are just about the most comfortable things next to my PJ's!! I feel these tanks as well as a good pair of skinny jeans are a must have staple in any girls closet! Fluffy Gluten Free / Paleo Pancakes

So I know I have been a little M.I.A. from the blog this week and I have to apologize. We have had a lot of family stuff going on as well as Me & J will be leaving this afternoon along with the rest of his family and we will be driving down to the beach! I cannot wait to get there and just relax! I'm hoping this stinkin' stomach of mine feels better though. I haven't had a stomach upset in quite sometime since I found out about my gluten allergy, so I don't know if I ate something bad or what but I was up all last night tossing and turning with my stomach in knots! If you follow me on instagram I'm sure you saw that ever so flattering sad picture I posted of me curled up in the fetal position. Stomach aches are the worst. Booo!! So, I know, I know I realize I'm just rambling on but I wanted to just let yall know yes I am still alive and as an apology gift for abandoning you this week I will leave you with one of my most favorite breakfast or any time of the day in this house hold recipe. I have tried more gluten free paleo pancakes recipes than I can count on two hands. I had given up on them for awhile but then magically one day when I was making another almond cake recipe I thought hey I am going to bring the two together to make a delicious pancake and I have been making them ever since. I posted a picture on instagram a little over a week ago and many of you were wanting the recipe so here it is my friends.
I hope you enjoy!!

What you will need:
1 egg
1/3 cup vanilla unsweetend almond milk
1/2 tbsp. melted butter (gluten free version) or coconut oil (paleo version)
1/2 tsp stevia or 1 tsp honey for added sweetness
1/3 cup almond meal
1/4 tsp. baking powder

First you will place your almond milk, egg, stevia or honey, melted butter or coconut oil in a bowl and whisk them together until completely combined and frothy. Then add in your almond meal and baking soda until all the clumps are gone and it is a good consistency. It will not be runny like the consistency of regular pancake batter but it shouldn't be super thick like the constancy of grits. It should be more like a thick gravy type consistency. If yours is super thick just add in a little bit of almond milk. Pour your batter onto a medium heated skillet pan. You don't want it to be super hot because the almonds can burn easily. Wait till the tops are fully covered in little bubbles and then flip them and let them cook a little bit more then they are ready to serve. I like to dip mine into the syrup instead of pouring it on top because I have found that they can get a little soggy. Feel free to keep playing around with the recipe if you like and add in things like pecans & cinnamon, or blueberries, bananas, or even chocolate chips. I hope you all enjoy and you all have a wonderful weekend.
