Gluten Free/Paleo Zucchini Brownies

 photo photo-9.jpg

This is one of my all time favorite desserts. Not only do I enjoy it because its Gluten free as well as Paleo (so its good with my food allergies) but my family actually really likes it as well, which in my opinion says a lot (dessert snobs). They are very easy and can be made ahead of time as well and then frozen for when you want a sweet little treat.

What you will Need:
- 1 1/2 cup finely chopped Zucchinis
- 1 cup Almond Butter (I use this kind)
(If you don't like almond butter and don't have
to worry about a peanut allergy you could
substitute for peanut butter.)
- 1/3 cup Honey
- 1 egg
- 1 tsp of vanilla extract
- 1 tsp of baking soda
- 4 tbsp unsweetened cocoa powder
- 3/4 cup chocolate chips (I use dark chocolate)
- 3/4 cup chopped pecans (optional)

Preheat oven to 350 degrees.
Combine all ingredients into a large bowl and mix everything together.
Pour your batter into a 9x9" greased baking pan or into individual cupcake liners.
Bake for 35-45 minutes if you choose to use a baking pan. Bake for 16-18 minutes if you
choose to make cupcakes! Every oven is different so check them with a toothpick to make sure they are fully cooked and not still gooey in the middle. Gooey brownie batter is yummy but gooey zucchinis... not so much. Once they are done, I like to serve them with some yummy old fashioned vanilla ice cream or a big cup of cold almond milk! I hope you enjoy them and you'll have to let me know what you think in the comments below.

Shorts: old cutoffs, Tank: Jcrew, Sweater: Flying Tomato (old), Headband: Anthro (similar one here & here), Necklace: Gift, Rings: a gift from Jeremy on our trip to Mexico & Thrifted (similar here, here & here)

Wow this week flew by fast. I didn't until just about an hour ago realize that it wasn't in fact Thursday but was Friday. Kind of exciting and kind of blew my mind at the same time. We are so ready for the weekend though. We have a wedding to attend and I always love me a good wedding (hopeless romantic) plus Jeremy has taken on a new hobby... bike riding. Not just like leisurly cruising around the neighborhood with me but like full on padded spandex shorts and riding for hours upon hours on his bike or as he would now say "his baby".Yesterday was one of his first big bike rides and he went a little over 10 miles. He came back with a funny little waddle of a walk and was drenched from head to toe in sweat. I'm excited for him though because since his two major knee injuries any type of physical contact sport makes me super nervous but for some reason I feel like this is a little more safe and super great physical therapy for his knee as well! So I am giving bike riding 10 stars. Supposedly he is going to ride over to my house today all the way from his so we will see. I'm hoping I don't get a sad little call that his tire popped and he is now stranded on the side of the rode with his thumb out! New adventures around here lots of new adventures!! Hope everyone has a wonderful weekend!
Lots of love! xoxo

It has been a scorcher these past couple of weeks so that means nothing but loose flowy dresses all the time! I picked this cute little J crew dress up on the sale rack a few weeks ago. It's super comfy and also looks cute paired with flats and knee length cutoffs worn underneath it. It definitely wins my Texas summer heat approval. I hope everyone had a wonderful weekend and look forward to seeing something new this week for those of you who have been asking how to get my loose waves!!

Ok people I'm officially taking a pole. I picked this skirt up at Target the other day and I don't know if it was because I am totally obsessed with highwasted skirts at the moment or because I actually really do love it! So I'm now in a little bit of a pickle... is this skirt totally cute or is it something my mom would have worn in the 80's, or even quite possibly something my grandmother still owns to this day. My family all jokes and calls me an old lady already so I am actually quite fond of old ladyish type things. I might have a rather large collection of house robes/pajamas but even more so is my ever growing collection of fuzzy sweaters. What can I say, I'm an old soul at heart! Pile on the Vick's vapor rub baby and let's call it a day! Let me know what you think in the comments below! Is is Granny Sheek or not so Sleek!!

In other news look at this handsome little number. I can't wait to grow old with you my dear.
I promise to forever love you and always share my old lady sweaters with you.

The things you cannot change...

 photo huiboi.jpg

I had a totally different post planned for today but as the days events went on I found myself needing to write. So here I am pouring myself out into this big blank white space, with a big tub of peanut butter and a rather large bar of dark chocolate. Today I found myself reading about a sweet little girl who had passed away due to her battle with cancer. I have been following her journey for sometime now and I just couldn't believe what the words on the computer screen in front of me were saying. I have prayed for her more times then I can count and now I am praying for her family to find some sort of comfort in all of this. I found myself sitting in the bathroom with big huge hot tears running down my face. There is something about the two words child and fatal illness that just shouldn't even be used in the same sentence. Today was one of those days where I just needed a good cry. I needed to mope around the house and think of all the world's troubles. I found myself once again seeing how fragile and sensitive I am. It is probably what I would tell you that my worst quality is. I give myself fully and I believe in good always. Some may call this being naive but let me assure you, do not confuse the two. I have always had a deep love for helping others and I will get myself fully invested into a cause, so much so that my heart is fully exposed and gets broken easily. I was talking to J the other night and I said I wish I could just be normal. I wish I could just go about my day carefree and not worry about anything, but I just can't seem to do that. It's a constant struggle internally with me. He of course replied and said, "that's what makes your heart good. You don't want to be normal. If there were more people in this world who truly cared the world would be such a better place". I know deep down inside he is right but I guess I am just wondering if anyone else ever struggles with things of such. Does anyone else find themselves caring so deeply that it results in a deep mushy ball of tears overwhelmed by all the messy things in this world like me? There are so many things I want to do in this small little life of mine and it can overwhelm a girl. I guess all I can do is to just choose to keep on believing in the good and know that there are some things you cannot change, even though I so badly would give anything to take away all the pain and bad stuff in this world. Until then, just know that I will still forever remain to be the girl who cries first always and who cares deeply with her whole heart.

Now I'm off to take a very long bubble bath
and yes I might take my Chocolate bar with me.

Our weekend was just about as comfortable and casual as this outfit. It was one of those weekends you dream about. Well I dream about that anyways (I'm a homebody through and through). We did absolutely nothing but just rent a bunch of red box movies, stayed in our pj's, cooked yummy food, laughed, talked, and hung out around the house, Something of which most people would call a boring weekend. To us we truly cherish them and soak up every minute. It doesn't seem that they come around as often as they used to. Why is this? Is it just an as you get older type of thing or what? If that's the case then I want to stay forever young with this little love bundle of a guy.

He fills my heart with so much Happiness and Joy.
He's given me some of the best of my days that's for sure.
Falling in love with your best friend rocks.
I hope you all had a wonderful weekend as well.

Meet Jagger the Toilet Fluffer

 photo Collagejknio.jpg
Yes I know what you're thinking. How fortunate and lucky we are to have our own personal toilet fluffer. Or some may ask what is a toilet fluffer? Well it's this sweet little fur-ball of an animal who goes into your bathroom and makes sure your toilet paper is always fluffed perfectly to your liking and as us classy folks we of coarse go for the extra added touch of slobber!

Go ahead you know you want one now.
Hope everyone's having a happy Sunday.

The little moments with you are always my favorite.

P.S. I think it's pretty cute when you are directing me... turn this way.. now give me a smile.. fix that little piece of hair... oh yes the lighting was just perfect in that one! Hehe I can't help but smile. You're the best.

Thanks for being so cool best friend.

Do it Yourself Gift Bags

 photo Collageviyuibio.jpg
First trace a small to medium size circle onto your eraser. Then cut it out using an exacto knife.
 photo DSC_0258.jpg
It should look something like this. Congratulations you have now made a perfect little circle stamp!
 photo Collagebuibini.jpg
Next choose the color of paints you want your initial to be as well as your polka dots.
I have that found permanent acrylic paints work best for this project.
 photo Collagegubihi.jpg
First place a little index card or a piece of paper inside the bag so your paint will not seep through to the other side. Then center and stamp your initial in the desired color.
 photo Collagevyugui.jpg
Next come the ever so cute polka dots. Stamp your dots around the initial, as well as the whole back of the bag.
 photo DSC_0278.jpg
Let them dry and then admire them in all of there cuteness!
There are so many other design ideas you could try as well.
Try embroidering a simple stitch on one of them like in the picture above.
 photo DSC_0272.jpg
Make more homemade stamps and try them out as well.
Happy Crafting.

My Comfy Movie Date Outfit...

This is exactly what I want to wear on date night. It's comfy but still looks like I tried, slightly. It's also warm and cozy because we all know it is freezing in the movie theater. Why is this?? And yes I am that crazy lady who carries a blanket into the theater!! I also sneak Snacks! Me and J have been known to take a wild variety of items to the movies. Some of which include sandwiches, chips and dip, pizza, hot cocoa in our own personal thermos', taquitos (yes taquitos... we also took sour cream and salsa to dip them in). Oh, and the infamous bowl of stew. What can I say, we like dinner with our movie!!
